EGGPLANT PIZZA STYLE 
1 med. egg plant
1 beaten egg
1/2 c. fine dry bread crumbs
Salad oil
Salt & pepper
1 (8 oz.) (1 c.) seasoned tomato sauce
1 tsp. oregano
2 tbsp. chopped parsley
1/4 c. grated Parmesan cheese
4 to 6 slices Mozzarella cheese

Pare egg plant and slice 1/2 inch thick. Dip in beaten egg then bread crumbs. Let dry few minutes. Brown lightly on both sides in hot oil. Overlap in buttered baking dish. Sprinkle with salt and pepper, oregano, parsley and Parmesan cheese. Top with Mozzarella cheese. Pour tomato sauce over all. If desired, top with shredded Mozzarella cheese. Bake 350 degrees for 20 minutes until cheese melts.
