FRUITY MUFFINS 
1 c. flour
1/2 c. quick oats
1 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
1 lg. egg
3/4 c. dark brown sugar
1/4 c. butter
1 tsp. vanilla
3/4 c. diced apples
3/4 c. fresh or frozen cranberries
1/4 c. raisins

Preheat oven to 350 degrees. Grease muffin cups. Mix, flour, oats, baking powder, cinnamon and salt. Mix egg and sugar in separate bowl. Whisk in melted butter and vanilla. Stir in the 3 fruits. Pour over dry ingredients. Spoon in muffin cups. Bake 20-25 minutes or until brown and firm. Each muffin is approximately 157 calories, 4 g fat, 1 g sat. fat, 121 mg sodium, 18 mg cholesterol. Yield 12 muffins.
