MOM'S CARROT CAKE 
2 c. sugar
1 1/4 c. oil
4 eggs
2 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
2 jars jr. baby food carrots
1 c. chopped nuts
Cream Cheese Frosting

Beat together sugar and oil. Add eggs, one at a time, beating after each addition. Sift together flour, salt, soda and cinnamon; add to sugar mixture. Stir in carrots and nuts. Bake in greased 9 x 13 inch pan at 350 degrees for 1 hour. Frost with cream cheese frosting.

CREAM CHEESE FROSTING:

3 oz. cream cheese
1/2 c. butter, softened
2 c. powdered sugar, sifted
1 tsp. vanilla

Cream together cream cheese and butter. Stir in sugar and vanilla.
