MOM'S 14K CARROT CAKE 
2 c. grated carrots
2 c. flour
2 c. sugar
1/2 c. vegetable oil
4 eggs
3/4 c. crushed pineapple
1/2 c. chopped walnuts
2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon

Mix wet ingredients together, set aside. Mix dry ingredients together. Add dry to wet. Pour into two 8 inch round pans or one 9 by 13 pan.

Bake 350 degrees for 40 to 45 minutes. Let cool. Frost with cream cheese frosting.

FROSTING:

8 oz. cream cheese
1/4 lb. butter
2 tsp. vanilla
1 box powdered sugar

Combine and whip to desired consistency.
