CARROT CAKE FROM MOM S. 
2 c. white sugar
1 1/2 c. Wesson oil
4 eggs
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
3 c. shredded carrots

Mix above ingredients in order and spread batter in a loaf cake pan. Bake at 300 degrees for 30-40 minutes. Remove from oven and cool.

FROSTING:

1 lb. powdered sugar
1 (8 oz.) pkg. cream cheese
1/4 stick butter (2 tbsp.)
2 tsp. vanilla

Cream powdered sugar and cream cheese together. Add butter and vanilla. Spread on cooled cake.
