MOM'S APPLE PIE CAKE 
1/4 c. butter
1 c. sugar
1 egg
1 c. flour
1 tsp. baking soda
1 tsp. freshly grated nutmeg
1 tsp. cinnamon
2 tbsp. hot water
1 tsp. vanilla extract
1/2 c. coarsely chopped walnuts
2 1/2 c. firm apples, cubed
Whipped cream or ice cream (optional)

Cream butter and sugar; add egg. Sift together flour, baking soda, nutmeg, and cinnamon. Add to butter mixture. Add hot water, vanilla, and walnuts. Gently fold in apples.

Place batter in greased 9-inch pie dish. Bake at 350 degrees for 45 minutes. Serve with ice cream or whipped cream while still warm.
