MASHED POTATO ROLLS 
1 c. mashed potatoes
2 sticks butter
3 eggs
7 c. flour
1 1/2 tsp. salt
2/3 c. sugar
1 pkg. dry yeast, dissolved in 1 1/2 c. lukewarm water

Blend potatoes, butter, eggs, salt and sugar. Add flour and mix. (Will be like lumpy cornmeal.) Add yeast water and mix. Place in large covered bowl in refrigerator for at least 2 hours.

At least 3 hours before serving, roll out and cut. Place in lightly greased pan or muffin tins. Butter tops lightly and allow to rise. Bake at 400 degrees for 10-12 minutes or until lightly brown. These are really worth the trouble.
