CREAM OF BROCCOLI SOUP 
1/2 c. chopped onion
2 tbsp. butter
1/4 c. flour
2 c. water
2 c. fresh broccoli flowerets
3 tsp. instant chicken granules or bouillon cube
1/4 tsp. pepper
1 c. milk

Put onion and butter in a 2 quart bowl. Cover with lid or wrap. Microwave on high 5-6 minutes, stirring once until onion begins to brown. Stir in flour to make a smooth paste. Gradually stir in water until well blended, then add broccoli, bouillon granules and pepper. Cover and microwave on high 10-12 minutes until broccoli is tender and soup is thickened. Carefully stir in milk. 156 calories per cup. Approximately 4 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.
