RIGHT SIDE DOWN SIDE CAKE | |
1 1/2 c. sugar 3/4 c. butter 3 eggs, well beaten 3 c. sifted cake flour 3/4 tsp. nutmeg 3/4 tsp. cloves 3/4 tsp. salt 1 1/2 c. buttermilk 1 1/2 tsp. baking soda 1 1/2 tsp. almond extract 1 1/2 c. orange marmalade 1 1/2 c. sweet peaches 3/4 c. brown sugar 1 c. raisins Cream sugar and butter. Add eggs, sift together flour, nutmeg, cloves and salt. Mix buttermilk and soda. Add to creamed mixture alternately with the flour mixture, beginning and ending with flour. Add almond extract and blend. Place remaining ingredients in bottom of greased 9 x 13 inch cake pan or an 11 or 12 inch iron skillet. Pour batter on top. Bake at 375 degrees for 40 minutes, turn out upside down. Serve with whipped cream on top. Serves 10 to 12. |
