UP - SIDE DOWN CAKE 
1/2 c. butter
1 egg
1/4 tsp. salt
1 1/4 tsp. baking powder
3/4 c. sugar
1 tsp. vanilla
1/2 c. milk
1/2 c. brown sugar
2 c. fruit
1 1/4 c. flour

Cream 1/2 the butter, adding sugar. Combine egg, milk, and vanilla; add alternately with dry ingredients. Beat until smooth. Melt remaining butter in pan and sprinkle brown sugar and arrange fruit. Pour batter over this and bake at 350 degrees for 45 to 50 minutes. Invert onto serving plate and top with whipped cream.
