White (great northern) Red Blackeye's Boil meat-ham hock, ham bone or neck bones for about 1 hour in water about 2 x as deep as meat. Wash and pick over beans and add to meat and water. Beans will float and you may have to add more water should be pretty deep. Add 2 large chopped onions, peppers red peppers, garlic, parsley to taste. Cook until soft and beans will make there own gravy. When soft add salt to taste and cook a little longer usually takes about 3 hours. Watch them and add water as necessary so they don't stick. |
