SPINACH CASSEROLE 
3 eggs
3 tbsp. flour
1/2 tsp. salt
3/4 c. butter, softened
2 tbsp. minced onion
8 oz. sm. curd cottage cheese
8 oz. Velveeta cheese
2 (10 oz.) pkg. frozen spinach, thawed & drained

Mix all ingredients together in a deep glass casserole dish. Bake at 350 degrees for 45 minutes, uncovered. Stir a few times while cooking so Velveeta cheese gets mixed throughout.
