“BISCUITS AND SAUSAGE GRAVY” IS IN:
NEXT RECIPE:  BUTTERMILK SCONES

BISCUITS AND SAUSAGE GRAVY 
8 buttermilk biscuits
3/4 pound of sausage (fatty sausage works best for this)
4 cups of milk
4-8 tablespoons flour

Prepare biscuits as instructed on package. Brown sausage in skillet. As soon as sausage is completely brown, turn to medium heat. Add flour by the tablespoon, stirring constantly. Let the flour turn BROWN before adding another tablespoon (if you don't, your gravy will taste like flour). After you have added enough flour to make the gravy as thick as you like, add milk and stir with whisk.

Serve over biscuits.

This recipe is REALLY good if you add a bit of sage (dried from the spice cabinet is fine) and a dash of cayenne pepper if you like a little heat. If cayenne is too much, some fresh ground pepper is excellent as well. My husband of course adds a few dashes of hot sauce to his before he eats it, but I prefer it without the hot sauce. Also excellent if you sprinkle a few shreds of sharp cheddar over the biscuits before baking. This is an easy and great stick-to-the-ribs recipe that's easy to jazz up a little to add that special touch that makes it your own.

AMAZING!! I used 1 lb. of spicy sausage and only 3 cups of milk (I like it thick) and it was GGGRRREEEAAATTTT!! As long as u use a nonstick pan it is awesome.

I added a half teaspoon of cayenne to the sausage as it cooked and used low fat milk. It was excellent. I also used Pillsbury Southern Style Biscuits not quite heavy enough for my taste. Good recipe.

Excellent recipe! I made this with beef bacon grease. If taste turns out a little bland, add a little sage, garlic salt, black pepper and it brings back the bacon/sausage flavor! Sage it the ultimate secret for most anything!!

To Jonathan in Penn... The recipe is simple but assumes some things and may be why yours didn't turn out right. Next time make sure that that nothing sticks to the bottom of the pan; as the flour browns it wants to stick to the bottom. No need to hurry this process. If gets dry, add a tbsp. of oil. Once it's brown add all four cups of milk and bring it to a steady simmer as you whisk. The steady bubbling means the heat is right to thicken the gravy; the longer you simmer, the thicker the gravy. You can't miss!

This is a great base to start a recipe, I used jimmy dean roll sausage, which isnt that fatty. while adding flour, i add butter as well. when adding the milk i add some fresh ground pepper, comes out great

Used corn starch for gravy used some creem cheese, was great. 1 lb. Italian sausage. Biscuits were perfect!
