PIZZA MEAT LOAF | |
1 (10 3/4 oz.) can Campbell's tomato soup 1/4 c. water 1/2 tsp. crushed oregano 1 sm. clove garlic, minced 1 c. sm. bread cubes 1/4 c. finely chopped onion 2 tbsp. parsley, chopped 1 egg, slightly beaten 1 tsp. salt 1/8 tsp. pepper 2 lbs. ground beef 2 slices Mozzarella cheese Blend soup, water, oregano, and garlic. In a bowl, combine 1/4 cup of soup mixture, bread, onion, parsley, egg, salt, and pepper. Mix thoroughly with beef. Shape into loaf. Place in a shallow baking pan. Bake at 350 degrees for 1 hour and 15 minutes. Remove from oven. Spoon off fat. Pour remaining soup over loaf. Top with cheese. Bake until melted. Serves 4 to 6. |
