EASY CHOCOLATE SAUCE 
2 oz. unsweetened chocolate
1 cup cold water
3 tablespoons sugar
1 tsp. vanilla

Grate the chocolate and add to cold water in a saucepan. Melt over medium-low heat, bring to a gentle simmer, stirring often. When mixture is smooth, remove from heat.

Stir in vanilla. Serve while still warm over ice cream, etc., or refrigerate for up to a week.

Variation: Use pure almond or hazelnut flavoring instead, or add a pinch of cinnamon to the vanilla. For extra chocolate flavor, omit vanilla and add 1 tbsp. sweetened cocoa or cocoa with chocolate chunks. Stir until dissolved.
