"TWO BUBBAS" CORNBREAD | |
3 (9 oz. ea.) boxes Jiffy cornbread mix 3 eggs, beaten 1 cup milk 1 1/2 cups shredded Mexican "fiesta" blend cheese 2 tbsp. mixed sesame and poppy seed 1/4 cup minced onion 1/4 cup minced parsley 1 cup whole kernel corn paprika, for sprinkling Preheat oven to 425°F In a large bowl, stir together the cornbread mix, eggs, milk, cheese, seeds, onion and parsley just until mixed. Pour mixture into a greased 13x9-inch baking dish. Top with a little more cheese and sprinkle with paprika. Bake at 425°F for 25 to 30 minutes until done and the cheese browns slightly.
