GRUYERE - EMMENTAL BRAID 
1 pkg. dry yeast
1/4 c. warm water
3/4 c. dry white wine or water
1 tbsp. sugar
3 1/2 c. bread flour
3/4 c. butter in chunks
5 eggs
1/2 lb. gruyere or emmental cheese cubes

Mix yeast, water and sugar. Add wine and 1 cup flour. Add butter, eggs and flour. Knead well until stretchy and elastic. Let rise in a warm, protected environment. Punch down.

Divide into 3 balls. Roll out, place cheese cubes in the middle and seal with a beaten egg. Braid together the 3 rolls. Brush with egg and bake at 400 degrees for 30 minutes or until it looks great!
