SPINACH AND FETA QUICHE | |
9 inch pie crust, tin foil and dry beans. Bake at 400 degrees for 12 minutes. Remove foil and beans. Beat 4 eggs and scant 2 cups half and half. 1 package frozen chopped spinach thawed and drained dry, 2 tablespoons lemon juice on spinach 1/2 pound Feta, 2 tablespoons parsley, chopped onion to taste and black olives to taste. Pour egg mix on, sprinkle fresh grated Parmesan and Romano on top. Bake at 375 degrees for 35 to 40 minutes. |
