SPINACH AND FETA QUICHE 
9 inch pie crust, tin foil and dry beans. Bake at 400 degrees for 12 minutes. Remove foil and beans. Beat 4 eggs and scant 2 cups half and half. 1 package frozen chopped spinach thawed and drained dry, 2 tablespoons lemon juice on spinach 1/2 pound Feta, 2 tablespoons parsley, chopped onion to taste and black olives to taste.

Pour egg mix on, sprinkle fresh grated Parmesan and Romano on top. Bake at 375 degrees for 35 to 40 minutes.

I used only 4oz of feta since that was all I had on hand. Used 1 whole medium onion and no black olives. Forgot to add the extra cheeses on top. Baking time was dead on for 40 minutes for me. Took this to a pot luck and it was scarfed down in minutes! OUTSTANDING! Definitely will be making again! Thanks for a great recipe to get my confidence in quiche making! :)
