CRABMEAT AND MUSHROOMS 
1/2 lb. mushrooms
4 tbsp. butter, divided
3 tbsp. flour
1 c. chicken stock
1/2 c. cream (all purpose)
14 oz. to 1 lb. Langostina crabmeat or imitation crabmeat
1/2 c. grated Parmesan cheese
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. paprika
3 tbsp. sherry

Saute mushrooms in 1 tablespoon butter. Remove mushrooms and add remaining 3 tablespoons butter and melt. Add flour, stir until blended. Stir in chicken stock and cream. When sauce is boiling add crabmeat and mushrooms. Stir in cheese, salt, pepper and paprika. Remove mixture from heat and add the sherry.

Serve in patty shells or over rice. Also can put in casserole and sprinkle bread crumbs on top. Bake at 350 degrees for about 20 minutes. Serves 4.
