GAZPACHO FILLETS | |
1 lb. fish fillets 1/2 c. coarsely chopped celery 1/2 c. coarsely chopped green pepper 1/2 c. coarsely chopped onion 1/2 c. sliced fresh mushrooms 1 c. chopped peeled tomatoes 1/4 c. white wine 1/2 tsp. basil 1 clove garlic, minced 1 tbsp. minced parsley 1/4 tsp. black pepper Lay the fillets in a baking dish. Cover with celery, green pepper, onion and mushrooms. In a separate bowl, combine the tomatoes, wine and spices. Pour this mixture over the fillets. Cover and bake for 20 minutes at 350 degrees. This may be prepared in electric frying pan, simmering for 20 minutes. Or in the microwave on high for 10 minutes. |
