FISH FILLETS FLORENTINE 
1 pkg. frozen chopped spinach
3/4 c. soft bread crumbs
3 tbsp. mayonnaise
1 1/2 tsp. onion, grated
1/4 tsp. salt
1/8 tsp. white pepper
1 1/2 lbs. fillet of haddock or trout
1/4 c. melted butter
1 c. grated sharp American cheese

Cook and drain spinach well. Combine lightly with crumbs, mayonnaise, onions and seasonings. Sprinkle fish with additional salt and pepper. Place half of fish in a well greased shallow pan. Cover with spinach mixture and top with remaining fish. Brush with melted butter. Bake uncovered at 375 degrees for 30 minutes. Remove from oven and sprinkle with grated cheese. Return to oven until cheese melts.
