FISH FILLETS WITH LEMON-ALMOND BUTTER | |
1 lb. frozen flounder or sole 3 tbsp. butter 1/2 c. finely chopped almonds 3 tbsp. lemon juice 2 tbsp. chopped parsley Melt 1 1/2 tablespoons butter in a 10 inch nonstick skillet. Add the frozen fillets, saute 3 minutes on each side. Remove to a warmed platter. Add remaining 1 1/2 tablespoons butter and almonds. Cook until golden brown. Add lemon juice. Pour over fish. Sprinkle with chopped parsley. Serves 3. |
