FILLETS IN LEMON BUTTER 
1 lb. fish fillets, such as sole or haddock
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. butter
1/2 c. fresh parsley
1 tbsp. lemon juice
1/4 c. buttery cracker crumbs (Ritz)
1/2 tsp. paprika

Arrange fillets in dish, thickest part outside edge. Sprinkle with salt and pepper. In glass container place butter and microwave on high for 1 or 2 minutes. Blend in parsley and lemon juice and pour over fish. Sprinkle with cracker crumbs and then paprika. Microwave on high 9 to 11 minutes. Rotate dish after 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
