1 lg. onion
1 tbsp. oil
1-2 pkg. spinach, thawed & pressed dry
5 eggs, beaten
3 c. muenster cheese (12 oz.)
1/4 tsp. salt
1/8 tsp. pepper

Cook onion in oil until tender. Add spinach and cook until all moisture is gone. Cool. Combine eggs, cheese, salt and pepper. Stir into spinach mixture. Pour into greased 9 inch pie pan. Bake at 350 degrees until set about 30 minutes. Can be made in small muffin pans for individual servings or tassie pan for appetizers.
