SQUASH PATTIES 
1 egg, slightly beaten
1 tbsp. sugar
1/2 tsp. salt
Dash of pepper
2 tbsp. milk
2 tbsp. onion
1 c. cooked smashed squash
1/2 c. self-rising flour
Hot cooking oil

Mix well all ingredients except flour and oil. Blend in flour; do not beat. Heat oil.

Drop by spoonfuls into 1/8-inch oil in skillet. Flatten patties to 1/4-inch. Cook until golden on both sides. Yield: approximately 14 patties.
