JEFF'S SIMPLE PANCAKES | |
DRY: 1 cup all-purpose flour 1 1/2 tbsp. Magic Brand baking powder (crucial) 1 tbsp sugar pinch of salt WET: 1 cup milk 1 egg 2 tbsp. vegetable oil 4 or 5 drops vanilla extract In large bowl combine all dry ingredients, then in separate container combine all wet ingredients (I just use the measuring cup for the milk). Mix wet and dry together well. Let rise 5 to 10 minutes. DO NOT REMIX OR STIR DOWN! Heat skillet or griddle to medium-high heat (if non-stick start cooking when hot, otherwise coat pan with oil or butter). Pancakes are ready to flip when bubbles break through surface.
