SWEET POTATO BALLS 
4 lg. sweet potatoes
4-6 tbsp. orange juice
8 lg. marshmallows
2/3 c. brown sugar, packed
1 tsp. grated orange rind
2 c. flaked coconut, toasted

Cook potatoes in water until tender (25-30 minutes). Cool. Peel, mash and measure 4 cups. Stir in brown sugar, orange rind and orange juice; mix well. Shape 1/2 cup potato mixture around a marshmallow, roll in coconut.

Place potato balls in 13 x 9 x 2 inch baking dish and bake at 350 degrees for 15-20 minutes. Yield 8. Potato balls can be frozen, thaw before baking.
