SWEET POTATO BALLS 
4 med. size sweet potatoes, cooked and mashed
1 tsp. vanilla
1 c. sugar
1 egg, beaten
1/4 c. milk
3 tbsp. all purpose flour
1 tsp. cinnamon
1/2 c. chopped pecans
1/2 c. raisins (yellow raisins, optional)
All purpose flour
1 c. coconut
1/2 c. melted butter

Combine first 8 ingredients, mix well. Dredge raisins in flour, then add to potato mixture, mixing well. Let cool. Shape into small balls; patties or log shape. Roll in coconut. Place on greased baking sheet and drizzle butter over.

Bake at 375 degrees until brown, about 20 minutes. Delicious! Makes a tasty addition to the Christmas dinner.
