REFRIGERATOR BRAN MUFFINS 
3 c. sugar, less 2 tbsp.
1 c. shortening, plus 2 tbsp.
5 tsp. baking soda
4 c. Kellogg's All-Bran
2 c. Nabisco 100% Bran
2 c. boiling water
4 eggs, or egg substitute
5 c. flour
1 qt. lowfat buttermilk

Pour boiling water over Nabisco Bran. In a large bowl, cream shortening and sugar. Add eggs and buttermilk. Add Kellogg's Bran. Add dry ingredients. Fold in soaked Nabisco Bran. Bake in greased muffin tins 15 to 18 minutes at 400 degrees. Batter can be stored in refrigerator for up to 1 month.
