PEACH-MELBA PARFAIT 
1 lb. peaches, cut into wedges
2 tsp. lemon juice
2 c. plain yogurt
1 tbsp. sugar
1/2 tsp. vanilla
1/4 c. no-sugar raspberry spread

Toss peaches with lemon juice in medium-size bowl. In a separate, smaller bowl, combine yogurt, sugar, and vanilla. Refrigerate. To serve, layer peaches and yogurt in 4 dishes and dot with raspberry spread.
