PUDDING AND FRUIT PARFAIT 
1 (16 oz.) can peach slices or 1 (17 oz.) can fruit cocktail
2 tbsp. sugar
1 tbsp. cornstarch
1/8 tsp. ground nutmeg
Dash of salt
1 (4 serving) size pkg. instant vanilla or lemon pudding mix
1 c. milk
1 c. dairy sour cream or plain yogurt

Drain peaches or fruit cocktail, reserving syrup. Cut peach slices into bite- sized pieces. In saucepan combine sugar, cornstarch, nutmeg and salt. Gradually stir in reserved fruit syrup. Cook, stirring constantly, until mixture is thickened and bubbly; cook 1 minute more. Stir in peaches or fruit cocktail; cool.

Prepare pudding mix according to package directions except substitute the 1 cup milk and 1 cup sour cream or yogurt for the milk called for. Let stand 10 minutes.

In parfait glasses alternately layer pudding and the fruit mixture, beginning with pudding and ending with fruit. Chill until serving time. Makes 6 servings.
