STUFFED TURKEY ROLL 
1 beaten egg
1/2 c. quick cooking rolled oats
1 lb. ground raw turkey
1/4 c. chopped onion
1/4 c. finely chopped celery
1/4 c. butter
1/2 tsp. ground sage
1/4 c. dried thyme, crushed
2 c. bread cubes, toasted
2 slices bacon

In a bowl combine egg, oats, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Add turkey and mix well. On waxed paper, pat mixture to a 12 x 9 rectangle. In a saucepan, cook onion and celery in butter until tender. Stir in sage, thyme, 1/8 tsp. pepper and a dash of salt. Toss with bread cubes and 2 tablespoons water, spread a top meat mixture. Roll up meat, jelly roll style, press to seal, put bacon on top. Bake.
