SWEET-SOUR GREEN BEANS AND
CARROTS
 
1 c. chopped carrots
1 (9 oz.) pkg. frozen cut green beans
2 slices bacon
2 tbsp. vinegar
1 med. onion, sliced
1 apple, peeled, cored & sliced
2 tbsp. sugar
1/2 tsp. salt

In saucepan, cook chopped carrots, covered in small amount of boiling, salted water until nearly tender, about 10 minutes. Add cut green beans and return to boiling. Cover and cook about 5 minuts; drain well.

In a skillet, cook bacon until crisp; drain, reserving 1 tablespoon drippings. Crumble bacon and set aside. Cook sliced onion in reserved drippings until tender, but not brown. Add sliced apple, vinegar, sugar and salt. Cook and cover just until apples are tender, 3 to 4 minutes. Add cooked beans and carrots; heat through. Sprinkle with bacon.
