GOLDEN POTATO CASSEROLE 
2 c. shredded Cheddar cheese
1/4 c. butter
1 c. sour cream
1/3 c. chopped green onions
1 tsp. salt
1/4 tsp. pepper
6 med. potatoes, cooked in jackets, peeled and coarsely shredded
2 tbsp. butter

Combine cheese and 1/4 cup butter in saucepan over low heat. Stir until cheese is melted. Remove from heat. Stir in sour cream, onion, salt and pepper. Add potatoes, mix gently. Pour into a buttered 2 quart casserole dish. Dot with 2 tablespoons butter. Bake at 350 degrees for 30 minutes.
