SQUASH PIE 
4 eggs
2 c. cooked squash
2 c. sugar
3/4 c. butter
1/2 tsp. nutmeg
1/2 c. milk
1/2 c. coconut
1/2 tsp. vanilla
1/2 tsp. lemon extract
1 c. chopped pecans (opt.)
2 unbaked pie shells

Whip squash. Beat eggs well. Add other ingredients and mix well. Pour into pie shells and bake at 400 degrees for 20 to 30 minutes.
