SQUASH PIE 
6 or 7 sm. squash, sliced, cooked and mashed
1/4 c. melted butter
3/4 c. sugar
1 tbsp. lemon extract
1 tbsp. flour
2 egg yolks, beaten
Dash salt
1 prebaked pie shell

(Stand in room temperature 15 minutes. Prick sides and bottom. Place on heated cookie sheet. Bake 5 minutes. Cool.)

Combine sugar, butter, lemon, flour, egg yolks and salt. Add squash. Spoon in pie shell. Bake at 370 degrees for 20-25 minutes, until firm.
