LEMON BARS 
CRUST:

1/2 cup (1 stick) butter
1/4 cup confectioners' sugar
1 cup all-purpose flour

Mix together, spread in a 9x9-inch pan. Bake at 350°F for 10 to 20 minutes.

LEMON TOPPING:

2 tbsp. lemon juice
pulp and rind of 1 lemon
2 eggs, beaten with fork
1 scant cup sugar
2 tbsp. all-purpose flour
1/4 tsp. salt
1/2 tsp. baking powder

Mix and pour over crust and bake at 350°F for 20 to 25 minutes. Sprinkle with confectioners' sugar using a sifter - it spreads more easily this way.

As soon as you take this out of the oven and before bars can cool; take a knife and carefully loosen bars from sides of the pan. Then let it cool and cut into bars.
