SQUASH OR SPINACH PIE 
3 c. squash (about 2 or 3 squash)
4 eggs
1 onion (optional)
1/2 c. grated cheese (Romano or Parmesan)
3/4 c. Bisquick
1/4 c. Wesson or Crisco oil

Grate squash and onion together. Mix all the above and put in any buttered pie dish. Cook at 375 degrees for 30 to 45 minutes.

FOR SPINACH PIE:

Substitute 2 packages frozen spinach, cooked fast and drained for the squash. Enjoy.
