CREOLE CORN 
1 med. onion, chopped
1/4 green pepper, chopped
5 tbsp. bacon fat
1 (1 lb. 1 oz.) can yellow cream style corn
1 egg, beaten
1 garlic pod
2 c. milk
1/2 c. corn meal
1/2 tsp. cayenne pepper
Salt to taste
Bread crumbs
Melted butter

Saute chopped onion and green pepper in bacon fat with finely chopped garlic. Add corn and egg beaten with milk. Add corn meal and cayenne. Season with salt to taste. Cook over medium heat until thickened, stir constantly. Pour into buttered casserole. Sprinkle top with bread crumbs and top with melted butter and bake. Recipe can be doubled and tripled. Will freeze. Super served with barbecue beef or chicken.
