FILET GIOVANNI 
2 prime filet mignons (each about 6 oz.)
6 tbsp. water
2 tbsp. olive oil
2 cloves garlic, minced
1 tsp. dried basil leaves
1 tsp. dried oregano leaves

Sprinkle a well-seasoned cast-iron skillet with salt and pepper, then heat until a drop of water sizzles on it. Add the steaks to the hot skillet and cook over medium-high heat for about 3 minutes per side or until desired°F of doneness. Remove steaks from pan.

In a small bowl, combine the remaining ingredients. Add to hot skillet and cook, stirring up browned bits on bottom, until liquid reduces slightly, about 2 minutes. Pour the sauce over the steaks and serve.
