Peach Cobbler / CM

“PEACH COBBLER” IS IN:

PEACH COBBLER 
1/4 cup (1/2 stick) melted butter
1/2 cup flour
1 teaspoon baking powder
1/2 cup sugar
pinch of salt
1/2 cup milk
1/2 teaspoon almond or vanilla extract (optional)
2 cups canned or fresh fruits, with juice

Preheat oven to 400°F.

Pour melted butter into a 9-inch square baking dish.

In a medium bowl, stir together flour, baking powder, sugar and a pinch of salt. Stir in milk and extract, if using; mix only until combined.

Pour the batter over the melted butter in the baking dish.

Ladle fruit with juice over the top of the batter.

Bake in preheated oven for 25-35 minutes, or until batter rises to the top.

Serve as is, while still warm, or top with vanilla ice cream.

Has anyone tried making this with fresh milled flour? If do, which wheat berry did you mill and how many grams of fresh milled flour did you use? Did you have to add more liquid?

I have tried it both ways with batter underneath and batter on top . I find that batter on top is much better.

This recipe is Delicious! This was my very first time making peach cobbler. It turned out great. The recipe was quick and simple, two things that will definitely encourage me to cook it again and again. I look forward to trying some other variations, (apple or cherry ,etc.)

Made it as directed for work and it gone almost immediately. To me it was a bit bland. So today I'm getting creative and making it 3 ways to use as a taste test adding bourbon (drunk), brandy (tipsy), brown sugar (sober). Sorry, no Merlot here!

Easy recipe for single guy, needed to add some fruit to diet... so this AM being Pi day, made the recipe sprinkled it with cinnamon then I added a sliced banana on top, hopefully I haven't created a scandal on this site with my fruit mix.

This was super easy recipe. Doubled the batch and made one blueberry and one peach. I used frozen fruit and sprinkled a little brown sugar in the top! They turned out beautiful!

Absolutely wonderful! Was so easy to make. I used home frozen peaches and tossed about half of the juice that came from defrosting and added a few raisins to absorb anything extra. Came out with wonderful texture. Also have question about using fresh fruit. Do I need to add extra moisture, or is there enough in the fruit to take care of it? Thanks

This is very tasty! I made this last night, and served it with some vanilla bean ice cream. I did add some cinnamon and next time will double the crust part, as we like the crisp of it... such a wonderful treat this time of the year!
