Herbed Roast Chicken / CM

RECIPE COLLECTION
“HERBED ROAST CHICKEN” IS IN:

HERBED ROAST CHICKEN
1 (3-4 lb.) chicken, quartered
1/4 cup flour
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. thyme
1/4 tsp. oregano or marjoram
1/4 tsp. rosemary
2 tsp. fresh parsley, minced
3 cloves garlic
1 large onion, chopped
1/2 cup chicken broth

Preheat oven to 375°F.

Wash chicken (approx 3-4 lb.) and cut into quarters.

In a heavy skillet, add olive oil to a depth of 1/4 inch. Add whole cloves garlic and chopped onion.

Measure flour, salt and pepper into a zipper plastic bag. Shake 2 pieces of chicken at a time in the bag until well coated.

Brown the chicken evenly on both sides in the olive oil. There is no need to cook through. Transfer browned chicken and onion slices to a casserole dish or baking pan.

Combine herbs and chicken broth. Baste chicken with broth and a little olive oil, and continue to baste occasionally during the cooking.

Roast chicken for 50 minutes or until tender and juices run clear (depends upon weight of chicken). Breast temperature should be about 160°F.

Sounded tasty.... until I see the picture of the cute little chicken on the page!

To the person above who was turned off by the picture of a chicken next to the chicken recipe: The problem with our diet in this country is that people are too disconnected from their food sources. That's what it looks like before it hits your store shelf! Unless it came from a factory farm.

I'm agreeing with previous comments.. The recipe does look good, but that picture of the chicken is really turning me off.

I grew up on a farm and saw more to this than just a picture of a chicken.

I'm trying this tonight. It sounds yummy! I have to add the negative, petty little comments about the chick are absurd!

 Ashmash (United States) replies:
Y are people acting like they don't eat chicken, before it goes to the store it is in fact alive and yes we did get disconnected from our natural food source you guys definitely gotta grow up

 Amber (Washington) replies:
LOL. You guys crack me up with being squeamish about the chicken. My 2 yr old was looking at a farm book and when we flipped to the part with the chickens she told me, "Yum, mommy, I eat?" It's food. You wouldn't get turned off by a pic of a carrot with the top still on... Great chicken recipe, BTW

 Aurora (California) replies:
Wow guys this is sad. I'm a California girl that lives in the city and loves to cook. This dish is amazing and I don't care that the picture of the chicken is there. Get over it guys!

 Terry (Georgia) replies:
The picture doesn't bother me... Looks rather tasty, a fine candidate for this fine recipe.

 Mel (Nevada) replies:
It looks like the chicken is saying... "Who, me?!"

 Uncle Gar (Florida) replies:
Would you all pass a recipe for Pot Roast, or charcoal broiled steaks if there was a picture of a cow? If so, don't cut your grass. It is also a living sentient being... ;-/

I made this and it was AWESOME

 Sherelyn (Washington) says:
This was a very easy recipe; chicken came out moist and flavorful! However, the browning process is very important- I didn't brown the chicken enough so after roasting, the skin didn't turn out as crispy as I would like it to be. My family really enjoyed it, and didn't even want to use ketchup!

Amazing chicken!!!

 Robin Borchers (Ohio) says:
The chicken is great and well liked by the family. As far as the picture of the chicken, farmers would understand this and not give it a second thought to be squeamish about the picture. We are so far from this country's agricultural roots, that people don't understand anything about where their food comes from. It is a shame and currently farmers are even vilified for having animals for slaughter. If one more animal rights person tells me about animals being sentient beings that we have no right to eat, I am going bonkers!

 Hannah (Georgia) says:
Nobody likes to see the cute animal they are about to scarf down. I know I'm eating chicken and can appreciate that it died for me to have nutrition but still... I've already even named this chicken! (It's Floyd if you're wondering).

 Debbie (Indiana) says:
I was looking up chicken recipes. I am a professional Chef. Graduate of CIA. I can not believe you have a chicken posted for this recipe. That is repulsive. People eat the poor thing, but you do not have to have a photo of this live animal. Remove the bird!

 Matthew Chapdelaine (Massachusetts) replies:
I ate Floyd. He was sentient and delicious.

A good recipe but really seeing the chicken next to it is so tragic and sad. I am going to cry.

Looks easy and delicious. I'm definitely trying this. To those turned off by the picture of the chicken... they've never been on a farm and prepared their own chickens from the yard!

My spiritual animal is the brisket. Great chicken recipe.

I'm trying this recipe tonight. Love new ones, and the best comment I think was the one with the little girl and the mom reading the book. Out of the mouth of babe's.

All of CM's recipes are very good and if that chicken was 6 ft. tall and 300 lbs it would eat you! Snap out of it!!
