Herbed Roast Chicken / CM

“HERBED ROAST CHICKEN” IS IN:

HERBED ROAST CHICKEN 
1 (3-4 lb.) chicken, quartered
1/4 cup flour
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. thyme
1/4 tsp. oregano or marjoram
1/4 tsp. rosemary
2 tsp. fresh parsley, minced
3 cloves garlic
1 large onion, chopped
1/2 cup chicken broth

Preheat oven to 375°F.

Wash chicken (approx 3-4 lb.) and cut into quarters.

In a heavy skillet, add olive oil to a depth of 1/4 inch. Add whole cloves garlic and chopped onion.

Measure flour, salt and pepper into a zipper plastic bag. Shake 2 pieces of chicken at a time in the bag until well coated.

Brown the chicken evenly on both sides in the olive oil. There is no need to cook through. Transfer browned chicken and onion slices to a casserole dish or baking pan.

Combine herbs and chicken broth. Baste chicken with broth and a little olive oil, and continue to baste occasionally during the cooking.

Roast chicken for 50 minutes or until tender and juices run clear (depends upon weight of chicken). Breast temperature should be about 160°F.

I was looking up chicken recipes. I am a professional Chef. Graduate of CIA. I can not believe you have a chicken posted for this recipe. That is repulsive. People eat the poor thing, but you do not have to have a photo of this live animal. Remove the bird!

The chicken is great and well liked by the family. As far as the picture of the chicken, farmers would understand this and not give it a second thought to be squeamish about the picture. We are so far from this country's agricultural roots, that people don't understand anything about where their food comes from. It is a shame and currently farmers are even vilified for having animals for slaughter. If one more animal rights person tells me about animals being sentient beings that we have no right to eat, I am going bonkers!

This was a very easy recipe; chicken came out moist and flavorful! However, the browning process is very important- I didn't brown the chicken enough so after roasting, the skin didn't turn out as crispy as I would like it to be. My family really enjoyed it, and didn't even want to use ketchup!
