Jiffy Corn Casserole / CM

“JIFFY CORN CASSEROLE” IS IN:

JIFFY CORN CASSEROLE 
1 (15 oz.) can whole kernel yellow corn, undrained
1 (15 oz.) can cream style yellow corn
1 (8 oz.) carton dairy sour cream
2 eggs, beaten
1 (8 1/2 oz.) box Jiffy corn muffin mix
1/2 cup (1 stick) butter, melted

Mix all together and pour into large, lightly oiled casserole dish.

Bake at 350°F for 55 to 60 minutes.

I make mine in a rectangle dish. When serving, I scoop it out from one end, then cover and place the leftover in the refrigerator. The next morning I slice it into 3/4 to 1 inch slices and brown them in butter and cover with syrup. Absolutely delicious. Shep

I make this every holiday as it is a favorite of my two sons...I double it, but I double every ingredient and while it does take a bit longer to bake, it works just as well...and leftovers are always popular...

We are a family of two so I only ever made this for "company" diners. But we really love it. So one day I made the recipe as directed, split it between two loaf pans, baked one and froze the other. When ready for the 2nd one, I made sure it was completely thawed and baked as directed. Worked just fine
