BEST EVER WAFFLES OR PANCAKES 
I've adjusted this recipe over time, tweaking it here and there until it's just right! You can add any one of a number of flavorings you might have or try one of the following: an 1/8 teaspoon of Fiori di Sicilia, a teaspoon of Amaretto, a few drops of orange or lemon oil or extract, or a 1/2 teaspoon of real vanilla.

You can make the batter ahead of time and store it in a sealed container in the refrigerator so that it will be ready for breakfast each morning. Or you can bake them in advance and freeze until needed. Frozen waffles can be reheated in your toaster oven at 375°F for about 15-20 minutes or microwaved about 35 seconds or til heated through.

1 3/4 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. fine corn meal (optional)
2 eggs, separated
5 tbsp. sugar
1 cup buttermilk, plain yogurt or sour cream
1 cup milk
6 tbsp. melted butter or shortening

Whisk together flour, baking powder, baking soda and salt.

Whip egg whites, set aside. Beat egg yolks with sugar and stir in milk. Beat in flour mixture. Add melted butter or shortening.

When thoroughly combined, fold in beaten egg whites.

If batter is too thin, add a tablespoon of flour; if batter is too thick, add a tablespoon of extra milk, adjusting the batter until it has the consistency of very heavy cream. The batter may thicken upon standing and may require adjustment again.

Serve dotted with butter, drizzled with maple syrup or topped with a spoonful of marmalade or fruit.

Variation: Once batter is on the griddle, add fruit such as blueberries, strawberries or bananas.

OMG these are so good! This was my first attempt at homemade pancakes but I've had them before at restaurants and I would put these up against ANY of those and my family agrees. Very easy and only takes an extra 30 minutes about from start to finish. I used sour cream because that was all I had on hand. Thanks for great recipe!

I'm on a dairy free diet so I substituted almond milk for regular milk, dairy free margarine for the butter and cultured coconut yogurt for regular yogurt and they still came out fantastic!

These are the absolute best waffles my husband and I have ever had in our 20 year relationship. I will never make Bisquick or Betty Crocker waffles again. We have a professional waffle maker that allows us to flip the waffle upside down while it cooks. The combination of the maker and this recipe were unbeatable. I doubt I will ever try another waffle recipe again. This is the one. This is THE One! Thank you for posting.

Thank you so much for this recipe. I used 1 cup each of plain yogurt and almond milk, and also followed others' suggestions to add 1/2 tsp vanilla. Extremely pleased with the light, fluffy results, knowing I can use the left over batter tomorrow.

So yummy, but lots of work and messy kitchen. We have a big family so we doubled the recipe, except didn't totally double the butter or the sugar since we like it with mashed banana. We used a cornmeal mix, which added a nice texture. but I think personally just plain cornmeal would have been too gritty. Also, we didn't know when to add the yogurt, so we added it when we combined the dry and wet ingredients, before we mixed in the egg whites. Then we added our mashed bananas and chocolate chips after putting the pancake batter on griddle. The whole family loved it, but it did take a little time. But my little girl helped, so that made it fun.

I use this recipe all the time! I even use cream cheese in lieu of buttermilk, yogurt or sour cream. If out of butter, oil. These pancakes are just amazing...I usually serve with blueberry compote or strawberries with basalmic, lemon juice/zest and sugar! The best results is when adding some corn meal and sifting all your dry ingredients. Thank you for this keepsake!
