GAZPACHO 
4 c. cold tomato juice
1 sm. well minced onion
2 c. fresh diced tomatoes
1 c. minced green pepper
1 tsp. honey
1 clove garlic, crushed
1 diced cucumber
2 scallions, chopped
Juice of 1/2 lemon
Juice of 1 lime
1 tsp. tarragon
1 tsp. basil
Dash of ground cumin
1/4 c. fresh chopped parsley
Dash of Tabasco sauce
2 tbsp. olive oil
Salt and pepper to taste

Combine all ingredients. Chill at least 2 hours. (Can be pureed if desired.) Makes 6 servings.
