CRACKED WHEAT BREAD 
2 pkg. yeast (1 3/4 tbsp.)
1/2 c. warm water
1 tbsp. sugar (white)
1 1/2 c. cracked wheat
1 1/2 c. boiling water
1/2 c. brown sugar
1 tsp. salt
2 tbsp. softened butter
4 c. white flour

Mix yeast in the warm water in a glass. Add white sugar to yeast when it is frothy.

Put cracked wheat in a bowl and pour the boiling water over it. Add the brown sugar, salt and butter. Add yeast mixture to cracked wheat mixture. Add white flour and mix to a firm dough. Knead until quite smooth, then put in a greased bowl, flip over to grease the other side of the dough, and cover with a towel and leave to rise until doubled in bulk. Punch down and make it into 2 loaves. Cover and leave to rise until almost doubled in the bread loaf pans. Bake at 350 degrees for 35 minutes.
