CRACKED WHEAT BREAD 
2 c. boiling water
2 c. cracked wheat
1/2 c. brown sugar
2 tbsp. butter
1 tbsp. salt
2 packets dry yeast
1/2 c. warm water
5 to 5 1/2 c. flour

Pour boiling water over cracked wheat, brown sugar, butter and salt. Cool. Soak yeast in warm water. Combine both mixtures. Gradually beat in 4 cups flour. Add more flour and knead, making moderately stiff dough. Continue kneading 8 to 10 minutes.

Place in warm place and let rise. Punch down once and let rise again. Shape and put in regular size bread pans. Let rise until double in size and bake at 400 degrees for 30 minutes. I put 2 small loaves in each pan.
