CHILI CON QUESO CASSEROLE 
2 cans (4 oz. each) milk chopped green chilies, drained
2 large tomatoes, seeded and chopped (2 c.)
2 c. shredded cheddar cheese (8 oz.)
1 c. Bisquick baking mix
1/2 c. sour cream
3 eggs

Grease square pan, 8 x 8 x 2 inches. Sprinkle chilies and tomato evenly in pan. Beat remaining ingredients with wire whisk or hand beater until smooth; pour over top. Heat oven to 375°F.

Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean. This has 18 grams carbohydrates.
