TURKEY MEAT LOAF | |
1/3 c. barley 2 (8 oz.) cans tomato sauce 1/4 c. water 2 tbsp. dry mustard 3 tbsp. cider vinegar 3/4 lb. ground turkey breast 1/3 c. chopped green onions 1 egg 4 cloves garlic, finely minced 1/4 tsp. black pepper In 1 cup of water, soak the barley overnight. Drain. In a small bowl, combine tomato sauce, water, mustard and vinegar. Set aside. Combine barley, ground turkey, green onions, egg, garlic, pepper and 1/2 cup of the sauce. Mix thoroughly. Arrange in a loaf pan. Pour an additional 1/2 cup sauce over top. Bake at 325 degrees for 1 hour. Serve with remaining sauce. Makes 8 servings. |
